World Forum of Mexican Gastronomy to take place in the U.S.

The World Forum of Mexican Gastronomy will take place from 16 to 19 August , at the Modern and Contemporary Latin American and Latino Art (MOLAA) in Long Beach, California . For the first time, this memorable event will take place outside the Mexican territory, and on its sixth edition, more than 60 chefs from both sides of the border will participate, bringing both traditional and contemporary flavors to the table.

“I consider this to be a slap with a white glove, as they say in my hometown,” stated chef Flor Franco, who will also participate at the event. Though she was born in the state of Veracruz , she is currently living in San Diego , and she believes that the forum will send an important message “amidst the migrants’ grief and suffering, we may give our brothers and sisters a platform for them to reunite, taste our food, see our traditional chefs face-to-face, listen to real Mexican music, and drink some pulque, mezcal, or tequila.”

As part of her programme for the event, she pointed out the diversity of origins, discourse, and styles of cooks and chefs that will take part at the World Forum of Mexican Gastronomy. They will not only cook several dishes and beverages, but they will also share their experience through a series of conferences and panel discussions for their academic program. There will also be demonstration courses, business meetings, a wine pavilion, and other cultural presentations .

Some of the subjects to be discussed at the Forum will be “ Mexican Cuisine for American Palates of 19th-21st Century ,” by José N. Iturriaga de la Fuente , “ The Californias Cuisine: Mexico-United States ,” with speakers such as Miguel Ángel Guerrero from La Querencia , and Katsuji Tanabe from Mexikosher .
