Mexico is the world's 8th cocoa producer

Mexico

is the world's eighth cocoa producer, with 28,000 tons per year, said the organizers of the 7th edition of the Chocolate and Cocoa Salón , a chocolate fair, which will be held in Mexico City .

In a statement, chocolate maker Sophie Vanderbecken said that "Mexican cocoa is considered as one of the finest and most aromatic and tends to be less bitter and more acidic, which depends on the type of cocoa and terroir, as well the post-harvest and manufacturing processes of chocolate ".

She added that Mexico is focused on rescuing native cocoa , rather than planting productive clones. Several types of cocoa exist, for example, Forastero , which make up 80% of the world crop; Criollo , 1% to 5% of the world crop; and Trinitario , 15% to 19% of the world crop.

She said that there are other categories, and currently, several others are being identified in Mexico .

For their part, the event organizers emphasized that Tabasco produces 66.9% of the national production, with over 17,281 tons; followed by Chiapas , who produces 32.9% with 9,346 tons.

They explained that Mexico occupies the 10th position in planting extension, with 1.8% of the world's harvest.

They said that the Chocolate and Cocoa Salón 7th edition will take place from August 30 to September 1 , where you can learn about the culture and consumption of chocolate and cocoa.
