If you want to make the most of Sunday’s game, be sure to prepare these healthy Super Bowl recipes that include avocado as the main ingredient!
To make this spicy take on guacamole you will need:
3 avocados , halved, pitted, and peeled
2 tablespoons of fresh lime juice
¼ cup of white onion , finely diced
¼ cup of cilantro , finely chopped
1 teaspoon of garlic , minced
½ teaspoon of salt
1 jalapeño chili pepper , seeded and finely chopped
1 serrano chili pepper , seeded and finely chopped
1 fresno chili pepper , seeded and finely chopped
1 teaspoon of cayenne pepper
- In a large bowl, mash the avocados with lime juice until the mix becomes chunky and smooth.
- Fold in onions, cilantro, garlic, salt, the jalapeño, serrano, and fresno chilies until well combined.
- Sprinkle cayenne pepper to garnish
You will need the following ingredients:
- 6 ounces of cooked ham, thinly sliced
- 2 large flour tortillas
- 2 avocados, sliced
- 4 Swiss cheese slices
- 3 roma tomatoes, diced
- 1 cup of spinach
- ½ cup of dried cranberries
- Place each tortilla on a plate
- Layer ham, cheese, avocado slices, cranberries, tomatoes, and spinach
- Fold in the sides of the tortilla and roll tightly
- Cut each wrap in half and serve
This recipe needs the following ingredients:
- 2 large eggs
- 1 large avocado
- ½ cup of cherry tomato, diced
- 1 tablespoon of goat cheese, crumbled
- 1 teaspoon of basil, finely chopped
- Salt and black pepper to taste
- Preheat the oven to 425ºF. Lightly oil a baking sheet.
- Slice the avocados in half; remove the pit and, using a spoon, remove 2 tablespoons of the meat, creating a small cavity in the center.
- Place the avocado halves in the center of the sheet, keeping them upright.
- Gently crack 1 egg over each half, try to keep the yolk intact. Season with salt and pepper to taste.
- Place in oven and cook for 20 minutes until the eggs white are completely cooked but the yolks still runny.
- While avocado filled eggs bake, heat a skillet over medium-high heat and cook for approximately 8-10 minutes, until it is completely crisp.
- Once avocados are cooked, remove from heat and top each half with cherry tomatoes and goat cheese. Sprinkle with basil and serve.
