Cecina

is a type of meat that has been salted and dried by means of air, sun or smoke.

Particularly, in Mexico , there are two sorts of this delicacy, thin slices of marinated beef called cecina and thin slices of pork coated with chili pepper called cecina enchilada .

Cecina

inherited the preparation of the Spanish Serrano ham brought to the country during the Spanish conquest of the Aztec Empire since it did not need cooking and it could easily be stored, making the air-dried-cured meat procedure very popular in those times.

Yecapixtla

, northeast of the state of Morelos in central Mexico is very well known for its version of the dish and since the last 27 years, the municipality has been celebrating the Feria Internacional de la Cecina y Tianguis Grande , which this year will be held from October 19 to 31 .

Some of the highlights of this event will be jaripeo exhibitions (a form of bull riding practiced mainly in Central and Southern Mexico), livestock exhibition , cultural activities and plays with international artists.
